Speciality from Enna and particularly from Leonforte.
Pull off the leaves from 12 artichokes, take only the inner parts and cut them into small pieces. In a pan put ½ glass of oil and fry the artichokes on a very weak fire for 20 minutes. At this point add 6 mashed anchovy fillets without fish bones; stir and keep cooking for a further 15-20 minutes.
Before removing from fire add minced parsley and the juice of 2 lemons. Serve cold or warm.
