Pull off the leaves from small artichokes keeping the stalks a few centimetres long. Cut them in four parts. Boil in a salted and acidulous (lemon and vinegar) water. When cooked, drain them. Dip each piece in flour, then in beaten eggs and breadcrumbs. Finally fry until golden brown. Very nice eaten with fried mixtures of meat.
