Boil 1 kg. of artichokes (without leaves), drain and cut them into pieces.
Beat 3 egg yolks with salt, pepper, the juice of one lemon and minced parsley. Apart whip the egg whites up into stiff peaks. Put the artichokes in a pan, on a weak fire, and pour the egg yolks. Stir until completely thickened; add the egg whites, keep stirring and remove from fire when they turn white.
