Peel and cut the eggplants (aubergines) into small cubes, salt and let them drain off for a hour. Rinse and drain again. In a pan put some oil and 4 cloves of garlic cut into big pieces. Pour the eggplant (aubergine) cubes and let season for a few minutes. Then add some minced parsley, salt, pepper and a glass of water. When boiling, cover and cook on a very weak fire until done.
