Typical recipe of the whole island and today common also in the whole Italy.
Cut the eggplants (aubergines) in large slices (do not peel them), salt and let them drain off for a hour. Rinse, drain and fry in oil.
In a pan put on the bottom a layer of tomato sauce, cover with a layer of eggplants (aubergines) slices, spread grated parmesan cheese, leaves of basil and tomato sauce again. Repeat the procedure three times. Bake in a moderate oven for 20 minutes.
Another version: some add egg slices and fried potatoes among the layers.
