Cut off the stalk from the artichokes and pull off some leaves in order to have smaller shapes. Split the artichokes in half and boil in salted and acidulous water.
Drain and place them in a greasy baking-pan, paying attention not to Place each artichoke on its cut surface: dress with salt, a few drops of oil, small leaves of mint, a little minced parsley, pieces of garlic; sprinkle with grated pecorino and breadcrumbs. Bake in a very hot oven until “au gratin”.
