Typical pie prepared in Enna: nice combination with ricotta.
Clean beets until 1 kg. of weight. Cook al dente and drain them. Cut into pieces and let season for a few minutes in a pan with olive. Put in a tureen and add 500 gr. of ricotta, 5 beaten eggs, salt and pepper.
Place the homogeneous mixture in a greasy Pyrex, sprinkle with grated cheese and put in a very hot oven for 15 minutes. Serve.
