Choose big peppers and roast them on embers; remove when not cooked well done and split in half. This way the two slices will look like cutlets. Dip each of them in flour, the in beaten eggs (with salt and pepper) and in breadcrumbs. Finally fry. They will be ready when coloured like a cutlet.
