This fish belongs to shark family: in fact, watching it, despite its small size, you have the sensation to face a “Sea Tiger”.
It’s not so valuable for its “wild” taste, but there are many recipes that make it pleasant and tasty.
It is usually sold without its skin and cut into slices. Fish sellers mix dogfish with other kinds of fishes, such as porbeagle shark, gattuccio, gattopardo; if you want to be sure it is an authentic dogfish, observe its skin which should be ash grey coloured with dark spots.
In dialect it is called “pallummo”, but it is well-known also as “Saint Paul’s tongue”. According to superstition, a dogfish’s tooth, hanged by the neck, protects against poisonous animals bite.
