Remove stems and seeds from peppers cutting just a small hole on the top. In a salad bowl prepare a stuffing mixture (in proportion) with the pulp of 3 ripe tomatoes, a tablespoon of capers, 24 green olives without stones and cut into pieces, 3 salted anchovies without fish bones and mashed, 5 tablespoons of grated pecorino with pepper, a bunch of minced parsley, ¼ glass of oil, 5 tablespoons of wet breadcrumbs, salt and pepper. Stir well and stuff peppers with this mixture. Then stand them in a baking pan with the hole turned up and bake in a moderate oven for 30-45 minutes.
