Pull of the leaves from the artichokes and cut the inner parts into pieces. Boil in a salted and acidulous water. After draining, dip each piece in beaten eggs and breadcrumbs. Fry until golden brown.
Variants: many fry the artichokes dipped just in flour; others fry them in oil shortly after boiling.
