Ingredients for many serves:
1,5 kg indian figs (prickly pears)
1 lemon
500 gr. caster sugar
Preparation: 20 minutes
Cooking time: 1 hour and 30 minutes
Wash the indian figs (prickly pears) in current water for 1 hour. Drain, and without peeling, place them in a pan.
Cover and cook, without water, for 15 minutes; then peel and mash them in a potato masher.
Pour this purée in a thick bottom pan and let it dry on a very weak fire for 10 minutes. Now, add sugar, lemon juice and its grated skin. Stir continuously with a wood stick until coagulated. When jam is rightly solid, remove from fire and pour into sterilized jars. Seal immediately and turn upside down for a few minutes. Then let them cool completely and store in a cool, dark place.
