Just one of the several versions of pasta al forno.
Slice and fry 1 onion till light brown, then add 2 chopped garlic cloves and 2 minutes later, add the pulp of 5 tomatoes. Put basil, salt and cook for 20 minutes. In the meantime, fry 4 sliced aubergines and boil the maccheroni (500 gr.). Put a layer of maccheroni in a greasy Pyrex, dress with a small amount of sauce and fried aubergines; sprinkle fresh caciocavallo in small cubes. Repeat the same process with the second and third layers; finally spread abundantly fresh grated pecorino. Put in the hot oven for 15-20 minutes and let cook au gratin.
