The recipe of home made maccheroni in Syracuse and Noto is really simple. It’s prepared with 1 kg. of durum-wheat flour, water, salt, 3 eggs. Roll out the dough and shape into little pieces similar to fingers. With a knitting needle press on these pieces one by one (or 3 by 3, or 6 by 6, if you’re enough able): the rolling movement produces little maccheroni with a hole inside. Little by little take the knitting needle off and let the maccheroni dry. It represents a dish for festivities. Typical in Rosolini.
