For Carnival in Ragusa maccheroni with tomato sauce represents a very traditional dish together with “maccaruna ‘nciliati” that is maccheroni with tomato sauce but “’nciliati”: dirty maccheroni with fresh or salted ricotta.
It’s worth talking about Carnival. In almost all Sicily the last days of this crazy period of the year are called sdirruminica, sdirrilùni, sdirrimarti, in order to indicate Holy Sunday, Holy Monday and Holy Tuesday. The term “sdirri” put in front of the word means “last”.
For each of those days there was a particular eating and consequently particular expressions such as: <<sdirruminica fatti amica a Monica>> that is “on Holy Sunday be friend of Monica”. The implicit meaning is that on Sunday you must be friendly with nuns because they’re so skilled at cooking titbits and sweets. But also <<sdirrilùni russa d’ova no pastoni>> which mean “on Holy Monday put many eggs in pasta cooked in the oven”. And finally << Sdirrimarti cu nunn’à ci runa a parti>> that means “this day be generous with poorer people”.
