Ingredients for many serves:
1,3 kg mandarins, not too ripe
1 lemon
caster sugar
Preparation: 1 hour
Cooking time: 50/60 minutes
Wash mandarins carefully and remove skins (only the orange coloured parts). Boil the skins for 5 minutes and mince finely. Remove seeds, cut mandarins into small pieces and add them to the skins. Weight and add 600 gr. of sugar in proportion to each kg of fruit. Transfer mandarins in a pan and cook on a very weak fire for 5 minutes. At this point, add the lemon juice, the sugar and let coagulate, stirring.
To check the jam consistence, put little bit of jam on a leaning dish: if it drips off quickly, it is not ready to set. Now pour into sterilized jars and seal. Turn upside down for a few minutes. Sterilize and let them cool completely, before storing in a cool, dark place.
