When cooked, mushrooms reduce in size loosing their water; this makes me think about the Sicilian expression “sbriògna còcu” that means “to shame a cooker” and it is given to mushrooms and similar foods, such as asparaguses, but also sow meat that in fact reduce in size when put on the fire.
Fry a onion in oil until golden brown, add 3 cloves of garlic in pieces, then 500 gr. of tomato pulp; salt and pepper. Cook for 15 minutes and add 1 kg. boletuses, the juice of 1 lemon and a bunch of minced parsley. When boiling add ½ glass of dry white wine and keep cooking for a further 25 minutes. Sprinkle with minced parsley and serve.
