These olives are stung by a fly and fall down from the tree, but at the meantime they are already ripe : they assume a pale colour, a bitter-sweet taste and oily consistence (exteriorly they’re quite withered).
Gather the olives, wash and drain. Eat them without bread or any other pickling.
If you’re wondering why they’re called “incamminate” (walking) this is the reason: when the olive fly stings them, olives walked to the ground and ripe.
