Ingredients for many serves:
1,3 kg oranges
1 lemon
caster sugar
Preparation: 1 hour
Cooking time: 30 minutes
Wash oranges carefully and remove skins (only the orange coloured parts); cut skins into slices and boil for 5 minutes. Drain and put apart. Peel oranges, cut them into small pieces (or slices) and transfer them in a pan with the lemon juice. Put on a weak fire and cook for 5 minutes; then add the skins and 800 gr. of sugar (for 1 kg of oranges),
Stir well and keep cooking on a weak fire, until jam is rightly dense. Now pour into sterilized jars and seal. Turn upside down for a few minutes. Sterilize and let them cool completely, before storing in a cool, dark place.
