Ingredients for many serves:
1,5 kg ripe, yellow peaches
caster sugar

Preparation: 45 minutes
Cooking time: 20 minutes

Using yellow peaches from Leonforte (percoche), you’ll obtain a particularly tasty jam. Wash peaches, peel, remove stones and cut into pieces. Weight and add 600 gr. of sugar in proportion to each kg of fruit. Transfer peaches in another pan and cook on a weak fire for 5-6 minutes, then add sugar and keep stirring until rightly consistent. You can check the consistence putting a little bit of jam on a leaning dish: if it drips off quickly, it is not ready to set. Now pour into sterilized jars and seal. Turn upside down for a few minutes. Sterilize and let them cool completely, before storing in a cool, dark place.
