Ingredients for many serves:
1 kg quinces
2 lemon
700 gr. caster sugar
Preparation: 20 minutes
Cooking time: 1 hour and 15 minutes
Cook quinces in abundant water with lemon juice, drain and sieve them.
Pour this purée in a pan and cook on a weak fire for 5 minutes; then add sugar, 2 tablespoons of lemon juice and cook, stirring.
When this mixture becomes solid like a jam, remove from fire and let cool. Finally pour into sterilized jars and seal.
