Typical recipe of the whole island.
Cut the eggplants (aubergines) into 1 cm thick disks. Keep the skin. Dip in oil and roast on embers both sides. When cooked, dress with a mixture of oil, minced parsley, minced garlic, salt and peperoncino.
Variants: some add wild marjoram. Some do not add peperoncino.
