This variety of mushrooms, botanically known as “agaricus melleus”, in dialect is strangely called with the name of “pani caudi”, that is “hot bread” because it has shape and colour as a bread.
Wash the mushrooms (500 gr.) and cut them in small cubes. In a pan warm a little oil, add 2 cloves of minced garlic and the mushrooms. Let season for a few minutes, then add salt, pepper and a handful minced parsley; finally add ½ glass of water, cover and cook. Serve mushrooms hot with their own sauce.
