“Funci di pinu” are just the “lactarius deliciosus”, mushrooms that sprout under the pine tree. They have a typical yellow-greenish colour and also a typical resinous taste that reminds the pine essence. They’re so tasty. This recipe comes from Vittoria and Santa Croce Camerina.
Clean well 1 kg. small mushrooms and cook them for 15 minutes in boiling water. Drain, purée and add a whole egg, 2 cloves of minced garlic, a bunch of minced parsley, salt, pepper and sufficiente breadcrumbs to make the dough quite consistent. Form small balls from the dough and make them flat with hands. Dip in beaten eggs and breadcrumbs and fry them in boiling oil. They can be fried also without dipping in beaten eggs and breadcrumbs.
