Universally this fish is considered the most delicate and fine for its taste. In all the Sicilian recipes this fish is fried, because, in my opinion, this is the most proper way to taste its flavour.
A sole is normally 300-400 gr. weight; big soles (such as limando) are not real soles, although they belong to the same family. In Sicilian dialect the sole is called “linguàta” that means “big tongue” (lingua) for its flat shape; but it is indicated also with other local terms, such as pittina, tùppiti and palàia.
Many recipes concerning fishes (nothing in common with soles) are called “linguàta” for the flat shape of these fishes.
