This speciality, differently prepared in accordance with the various areas, is typical of coastal areas full of rocks, where sea urchins are used to live.
Cut open the sea urchins with a pair of appropriate scissors, scoop out the egg of the female urchin and a small quantity of humour held in the cavity and place it inside a glass container. Add 1 tablespoon olive oil and the juice of ¼ lemon (per person), pepper and a pinch of salt. Boil the spaghetti, drain it well and put in the glass container, stirring thoroughly. Garnish with minced parsley.
