Squid takes this name from the Latin term “calamus”, which was a pen for writing, and from the later Latin term “calamarius”, which was the black ink for pens. This fish, in fact, has a black bladder in its sack, which is not usually used in cooking, differently from cuttle-fish; furthermore squid has another small bladder full of yellowish moisture, which is frequently used in dishes and gives them a musk taste.
Its shape is long, with spread wings, transparent; it’s called “calamaru” and small squids are “calamaricci” or “calamaricchi”.
