Here is it a universal way to cook squids, although ingredients vary from place to place.
Clean 1 kg. squids and remove their bladders. Separate sacks and tentacles. With a knife cut the tentacles in small pieces, add 200 gr. of breadcrumbs, 2 cloves of garlic, a bunch of minced parsley, 2 tablespoons of oil, salt and pepper. Stir. Fry in pan until bread turns golden brown. When the mixture is colder, add 100 gr. of grated caciocavallo (or tuma in small pieces) and stuff the sacks. Now sew up them and place them in a baking pan with a little oil. Bake in a moderate oven fro 50-60 minutes; otherwise, pour oil over and roast on embers.
