Speciality from Enna. The main ingredient is obviously mushrooms but not only. Taglierini is home made lasagne, typical of this places.
Fry an onion in a glass of olive oil; add 300 gr. of mushrooms cut into pieces, 12 minced black olives, 1 tablespoon capers, 150 gr. of fresh broad beans, a few leaves of basil and laurel; season for a few minutes. Add 1 kg. of tomato pulp.
Fry 1 aubergine (500 gr.) cut into small cubes and add them to the tomato sauce while cooking. Check for salt and add pepper. Cook 800 gr. taglierini and dress it with abundant sauce. Sprinkle with grated pecorino.
